David Hall carrying two trays of microgreens on the farm in Fort White, Florida

A family farm in Fort White, Florida

North Florida Microgreens is a small farm run by the Hall family. We grow microgreens and freeze-dry them into powders, treats, and daily subscription boxes.

Four generations work the trays here. You're welcome to come see it. We give free tours on Sundays.

What We Make

Three ways to get greens in

Same crop, three forms. Which one suits you mostly depends on how close you live and how you like to cook.

Fresh microgreens

Cut the day you pick them up. Sharp, tender, and gone in a week, the way fresh greens are supposed to be. Local pickup only.

Freeze-dried powders

The same greens with the water pulled out under vacuum. A dry powder that keeps its color and flavor, and stirs into whatever you're already making.

Microtreats

Bite-sized freeze-dried pieces in four flavors, plus one that rotates with the season. The easiest thing we make for kids.

The Farm

Grown indoors, on purpose

We start with certified organic seed and organic growing medium, and grow indoors under lights so the crop doesn't depend on the weather.

Florida summers are hard on tender greens. Growing inside means a tray seeded in July comes up the same as one seeded in January, with the same timing, same texture, same flavor. It also means we can run more than fifty varieties at once instead of whatever the season allows.

Every tray gets seeded by hand, watered on a schedule, and cut young. From seed to harvest is usually somewhere between seven and fourteen days depending on the variety. What isn't going out fresh goes straight into the freeze-dryer, which is how the powders and treats get made.
